
The best thing about growing up on a cotton & cattle farm north of Memphis, TN was the Gallaher family 4th of July family bar-b-que. Granddad and Uncle Hap made sure the Boston Butt and ribs were cooked to perfection over charcoal in a 55-gallon drum. The Braggadocio Sportsman Club boys did their bar-b-que over a pit made out of concrete blocks covered with hog wire, which was fired with charcoal that started out as a pile of hickory wood off to the side. Everyone used a mustard based basting sauce which you can find in the recipe section. So there’s where my hankering for good "Southern Style Pit BBQ" comes from.
Having settled in "THE DEEP SOUTH", L.A., (Lower Alabama) I wanted a grill of my own, maybe a smoker. But I didn't want one of those thin metal grills that you can buy. Oh, I can't say that I've never bought one, but once was enough. You can see them every spring, just like wild flowers that pop up on the side of the road; you can also see last year’s discarded bbq grills along the side of the road for the trash man to pick up!
Well, somebody gave me a propane tank and I thought that I could make a grill out of it, and I did. The very first day that I was cooking on it, a gentleman drove up into the drive way and asked, "Mister, is that grill for sale?" I replied, "If you're buying, I'm selling. I can always build another one." And so I sold that one and made another one, this time a little different, as I hadn't yet got the hang of it. Building grills that is. And I sold that one. And so on and on. I built and I sold. I sold and I built. Then one day I leased one to a bank for 1 year. And then I leased one to another bank, and then a business, and then to a church. I didn't intend on being in the grill leasing business. But like Jerry Clowers said, "I sort of backed into the business, not meaning to."
Most of my business is leasing grills by the year. If you want to buy one, that is fine. But remember, if you do, you are paying my federal income tax, my state income tax, my social security tax, Alabama sales tax, Geneva Co sales tax. If you lease a grill, it’s a nice tax deduction for me and you get to use a real nice grill for just pennies a day! It's your choice.
