MARTY'S BAKED BEANS

Everyone says my baked beans are the best they've ever tasted. A lot of the time, it's all my wife Diane and I have as a meal. I never fix my beans the same way twice, however, there are some basic guidelines.

1 can Van Camp's pork & beans, (Hickory flavor). 2 cans if you're feeding family & friends.

Chopped pork from the Boston Butt I smoked, at least 1 cup or as much as 3-4 cups. It depends on how much pork you need as a main entree or to make sandwiches, then you use what's left for the beans. Sometimes it's a little and sometimes it's a lot.

Wicker's BBQ sauce, (it's a vinegar based sauce) and whatever sauce you feel you need to use up.1/2 of a cup or so.

Tennessee Sorghum Molasses from a 1/2 gallon metal can. If you can't get TN sorghum, cane syrup from Alabama works as a good substitute. 4-6 ozs. Mostly depends on how much is left in the can or jar.

Honey. Nothing is sweeter than Tupelo honey. About 3 tablespoons.

Brown sugar. About 3 tablespoons.

Mustard, dollop.

1/2 Sweet Valdalia onion, minced.

Whiskey- Wild Turkey, Mr. Jack. 1-2 shots.

Just a splash of Worcestershire sauce.

Squirt of lemon juice or Margarita mix.

Dab of Ranch dressing.

Sea salt, couple of shakes.

Dash of cinnamon.

Few grains of garlic powder.

Mystery ingredient________________________. Whatever you see that looks good, just barely enough so that you can hardly taste it.

Simmer for hours, stirring frequently.

MARTY'S POTATOE SALAD

(2) cans Delmonte Fresh Cut Whole New Potatoes or use fresh boiled potatoes, cut into bite sized pieces.

(5) strips of bacon

(4) hard boiled eggs

dash vinegar

spoon sugar

squirt of mustard

salt & pepper

paprika

3/4 to 1 cup mayo

squirt of 1,000 island dressing

squirt of ranch dressing

spoon sweet pickle relish

some shredded cheese(sharp cheddar)

The trick is, just to use very little of each of the side ingredients so that the side ingredients are not even noticable, even though they are there. If you can detect any of the side ingredients, then you have used too much. Which doesn't make sense, but it's works. Trust me. Try it my way, you'll like it.

BRAGGADOCIO SPORTSMAN'S CLUB BAR-B-QUE SAUCE

1 qt. vinegar

1 pt. mustard

Juice of 6 lemons

1/4 cup of sugar

1 tbsp salt

1 box paprika

red pepper to taste (optional)

To bbcue chicken, add stick oleo to sauce. (keep refrigerated)

MARTY'S MEMPHIS STYLE COLE SLAW

One big, heaping tablespoon of mayo.

A really large splash of vinegar.

Teaspoon of sugar.

Salt and pepper to taste.

Mix with angle hair cole slaw. Good for hanmburger and bbq sandwich toppings.
